A domed brick oven, fired with split ironbark from mid-afternoon. By the time we open it's too hot to stand close to — which is exactly the point.

Nonna's rules
Six house rules, taped to the kitchen door. They are not up for discussion.
The dough rests for 48 hours. You can wait twelve minutes.
Good dough is slow and the oven is fast. That's the deal.
No pineapple.
We love you. It's still no.
Rocket and prosciutto go on after the oven.
Heat wilts the rocket and toughens the prosciutto. The builder above knows this too.
Fold your slice if you like.
Nonna does, and she's been eating pizza a lot longer than you.
Leftovers go home in foil.
Ask and we'll wrap them. Cold pizza for breakfast is allowed.
Kids get a ball of dough while they wait.

We don't deliver. Pizza is best within five minutes of the oven.
