Forty stools around one slow, looping belt. Take whatever catches your eye — the colour of the plate is its price — then stack the empties and we count them when you're done.

Scene 2 · How the train works

Sit, reach, stack.

  1. Sit anywhere at the counter.Every stool faces the belt. Pickled ginger, soy and wasabi are within reach.
  2. Take the whole plate.Lift off anything that passes. The plate colour is the price; domed plates keep desserts fresh.
  3. Ask for anything special.Hand rolls, sashimi and hot bowls are made to order — just ask the chefs in the middle.
  4. Stack your empties.Keep plates in front of you. When you're done we count the colours and bring the bill.

Counter manners. Once a plate leaves the belt it's yours — please don't put it back. Green tea is free: a spoon of powder in your cup, then hot water from the tap at your seat (it's very hot).
