Know your cuts
Pick an animal, then a cut. You’ll get what it’s sold as, how to cook it and the price by the kilo — and you can add it to your pickup slip with a weight.
Behind the counter
A glass-fronted cool room lined with salt blocks. Beef hangs on the bone with fans moving the air, and time does the rest: moisture leaves, the flavour concentrates and the meat’s own enzymes make it tender.
Firmer and beefier, still clean and bright. A good first dry-aged steak.
Nutty and buttery. The one we take home for ourselves.
Deeply savoury, with blue-cheese edges. A few each week, for the curious.
A side can lose around a fifth of its weight to evaporation and trimming as it ages — which is why it costs more per kilo.

Minced, seasoned and filled in natural casings twice a week. Gluten-free batches are made first, on clean equipment.
Coarse-ground chuck, white pepper and a little nutmeg.
Toasted fennel seed, garlic and a pinch of chilli.
